Denmark and its two closest neighbors—Norway and Sweden—each have their own version of Christmas rice pudding.The Danes usually serve their pudding with raspberry sauce, a colorful addition to a holiday table
Ingredients of Danish Rice Pudding/Riskrem (Denmark)
Rice Pudding:
* 2 envelopes unflavored gelatin
* 1/2 c. sugar
* 1/2 c. water
* 1/2 tsp. salt
* 2 c. milk
* 1 1/2 c. cooked white rice
* 2 tsp. vanilla extract
* 1/4 c. chopped almonds
* 1 c. chilled whipping cream
Preparation for Danish Rice Pudding/Riskrem (Denmark)
1. In a saucepan, heat gelatin, sugar, water, and salt. Stir until gelatin is dissolved (about 1 minute). Stir in milk, rice, vanilla, and almonds.
2. Place the saucepan in a bowl of ice water, stirring occasionally for about 15 minutes, until mixture thickens slightly.
3. Beat chilled whipping cream until stiff. Fold into rice mixture.
4. Pour into an ungreased 1 1/2-quart mold. Cover and chill for 3 hours.
5. Turn out and serve cold with raspberry sauce.
Danish Rice Pudding/Riskrem (Denmark) Raspberry sauce:
1 10-oz. package frozen raspberries, thawed 1/2 c. apple or currant jelly 1 tbsp. cold water 1 1/2 tsp. cornstarch
Preparation for Danish Rice Pudding/Riskrem (Denmark) Raspberry sauce:
1. In a saucepan, bring raspberries (with juice) and jelly to a boil.
2. Combine water and cornstarch in a bowl. Then stir into raspberries. Bring to a boil again, stirring constantly for 1 minute.
3. Serve warm sauce on top of cold pudding.
