MANGO - AVOCADO SALAD
Fresh tart mango, creamy avocado, tangy lime with a flash of spice. This is a wonderful summer salad.
Ingredients of MANGO - AVOCADO SALAD
2 medium Mangos Ripe and fresh
2 medium Avocados firm, not squishy
4 medium Lettuce leaves
-- Lime Dressing of MANGO - AVOCADO SALAD --
4 tablespoons Key Lime juice - about 4 limes (not Persian limes)
1/4 teaspoon Salt
1 pinch Cayenne pepper - to taste
1 tablespoon Sesame Oil - dark (toasted)
3 tablespoons Canola oil - or other light flavored oil
-- Garnish of MANGO - AVOCADO SALAD--
1 tablespoon Key lime zest - grated
PREPARATION of MANGO - AVOCADO SALAD
1. Peel and dice mangos into 1/2 inch cubes
2. Halve, seed, and peel avocado. Dice into 1/2 inch cubes
3. Mix gently together and drizzle with Lime Dressing.
4. Place on lettuce leaves, sprinkle with lime rind and serve at once.
Lime Dressing: In a small bowl mix lime juice, salt, and cayenne. Using a whisk or fork, gradually beat in the oil until well combined.
