This nutritous dish can be made ahead of time and refrigerated or frozen. then reheated at party time.

Ingredients of Spinach and Cheese Squares
1/2 cup egg substitute
6 tablespoons whole-wheat flour
10 ounces chopped spinach thawed (frozen)
2 cups cottage cheese low-fat
2 cups Cheddar cheese reduced-fat
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper
1 pinch nutmeg
3 tablespoons wheat germ

Preparation of Spinach and Cheese Squares
1 In a large bowl beat the eggs with the flour until the mixture is smooth.
2 Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a nonstick coated 13x9x2 -inch baking pan.
3 Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.
4 Let stand for about 10 minutes and then cut into 1-1/2-inch squares for serving.
