A refreshing low-cal chilled soup. Diabetic friendly and delicious.
Ingredients of Watermelon Gazpacho
4 cups Fresh watermelon - cubed, seeded
3 medium Tomatoes - chopped
1 small Cucumber - peeled and diced
3 large Scallions - white & green, chopped
1 medium Serrano chile - seeded, chopped
1/2 cup Yellow bell pepper - seeded & chopped
1/4 cup lime juice - about 3 Mexican limes
1/4 teaspoon Salt - to taste
1/2 teaspoon Black pepper - to taste
1/4 cup Cilantro - chopped
Preparation of Watermelon Gazpacho
In a blender, combineingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least 4 hours. Serve app 3/4 cup portions as an appetizer. Garnish with basil, parsley, or cilantro as desired. Serve with Tapas style accompaniments i.e. crostini, grilled shrimp, or other small dishes.
