Daikon and Carrot Salad
This dish goes particularly well with Sesame Scallops

Ingredients of Daikon and Carrot Salad
200 g carrots julienned
250 g daikon radishes julienned
1 Green onion chopped

Dressing of Daikon and Carrot Salad
1 tablespoon mirin
3 tablespoons rice vinegar
2 teaspoons sugar
2 teaspoons peanut oil
1 teaspoon sesame oil

Preparation of Daikon and Carrot Salad
Put vinegar, mirin, and sugar together in a small bowl and stir until sugar dissolves. Add peanut and sesame oils and blend well.

Place carrots and daikon in a colander and sprinkle with salt. Let stand for 15 minutes or until limp. Transfer to a bowl and toss with chopped green onion and dressing. Taste for salt and add more if needed.

Marinate for at least 10 minutes and serve chilled.
