Fish Salad with Lime Dressing

Ingredients of Fish Salad with Lime Dressing
1 cup chicken stock
1 cup couscous
Salt and pepper, to taste
4 green spring onions, sliced
1/2 tsp grated lime rind
1 cup chopped fresh mint leaves
500g firm white fish fillets
1 Lebanese cucumber, chopped
2 mangoes, thinly sliced
Lime wedges, to serve

Lime Dressing for Fish Salad with Lime Dressing
1/4 cup sweet chilli sauce
2 tblsps lime juice
2 tblsps olive oil
Salt and pepper, to taste

Preparation of Fish Salad with Lime Dressing
1 To make lime dressing, place all ingredients in a small jug. Whisk to combine.
2 Place stock in a medium saucepan. Bring to boil. Remove from heat. Add couscous. Cover and stand for 5 minutes. Fluff with a fork. Season. Add spring onions, rind and mint. Toss to combine. Set aside.
3 Season fish with salt and pepper. Cook fish in a heated oiled frying pan, for 3 minutes on each side, or until cooked through. Remove from pan. Break into large flakes.
4 Combine fish, cucumber, mangoes and dressing in a large bowl.
5 Serve couscous in bowls. Top with fish mixture. Serve with lime wedges.
