Pasta With Pepper Prawns
The heat from two kinds of fresh peppers gets mellowed out by cooling lime, sweet tomatoes and buttery shrimp. I definitely recommend using fresh, in season tomatoes for this, right off the vine cherry tomatoes from your own backyard if possible

Ingredients of Pasta With Pepper Prawns
4 oz dry, whole-wheat linguine
2 cloves garlic, finely chopped
1 jalapeno pepper, seeded and minced
1 cherry pepper, seeded and minced
1/2 cup dry white wine
zest of 2 limes
juice of 1 lime
2 tbsp tomato paste
2 cups (1 pt) cherry tomatoes, halved
1/2 cup water (reserve from cooking pasta)
1 lb large shrimp, peeled and deveined

Preparation of Pasta With Pepper Prawns
1.In a large pot of boiling, salted water, cook pasta until al dente, about 6-7 minutes. Drain, reserving 1/2-3/4 cup cooking liquid, and set aside.

2.Cook garlic and chilli peppers in a small amount of non-stick spray in a non-stick skillet until fragrant and beginning to cook down.

3.Add wine, lime zest, lime juice, and tomato paste, simmer for 1 minute.

4.Stir in the cherry tomatoes and reserved pasta water. Cook 4 minutes longer.

5.Add shrimp and cook just until the prawns turn pink.

6.Stir in the cooked pasta to combine and serve.
