Asian Chicken Lettuce Wraps
An easy, elegant appetizer or light main course. Savory, soy-flavored chicken is spooned into individually wrapped lettuce shells.

Ingredients of Asian Chicken Lettuce Wraps
12 oz ground chicken
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1/2 onion chopped finely
1 teaspoon grated ginger
1 clove Garlic minced
1/2 red pepper diced finely
1/2 yellow pepper diced finely
1 tablespoon cilantro finely chopped
1 tablespoon green onions finely sliced
1 cup mushrooms cleaned and finely chopped
1 tablespoon vegetable oil
2 tablespoons rice vinegar
1 tablespoon white sugar
2 tablespoons water
2 tablespoons Cucumber finely diced
1/2 teaspoon red pepper flakes or more to taste
1 head butter lettuce washed dried and chilled

Preparation of Asian Chicken Lettuce Wraps
Bring a large wok up to medium high heat. Add vegetable oil, and saute onions and garlic for 1-2 minutes until softened. Add mushrooms, ground chicken, diced pepper, ginger. Stir fry on high heat for 4-5 minutes or until chicken is completely browned. Drain liquid, then add the remaining ingredients and stir. Bring down to a simmer and/or cover to keep warm.

Meanwhile, prepare the sweet/sour sauce to accompany the lettuce wraps. In a small saute pan, add sugar and water, and stir to dissolve. When the sugar is completely dissolved (2-3 minutes), add vinegar, cucumbers and red pepper flakes.
